The Best Veggie Patty comes from the Banana Heart – A Filipino Hamburger Recipe

I did not have any qualms about the bread to be used in this Filipino hamburger recipe. I did not even have second thoughts on what veggies to slip in the burger. What I was thinking a lot about is the patty.
I was sure that I will use Banana heart for this Filipino hamburger recipe. I did not have any second thoughts about that either. What I was thinking was, growing up and consuming a lot of banana heart burgers, my memory tells that those burgers lack texture because we put a lot of flour in it.
Here are two usual problems with doing a veggie burger:
1. The texture is like mashed potatoes or reprocessed beans. It is so far from the usual burger that has that meaty texture. The moment your teeth slice through the patty, you can feel that you deserve this because you are alive. Eating veggie burgers feels like you are eating 3 layers of bread. And then you die.
2. Because of the lack in texture and a linear taste of vegetables (whatever vegetable, tuber or bean you put in), the usual veggie patty loads it with a scary amount of spices. Ever had a veggie burger where all you can taste is coriander seeds, or cumin, or pepper? I don’t want to do that. It’s taste buds suicide.
So I decided to use these ingredients for the veggie burger patty:

1 Banana heart a little bit more than half a kilo, chopped (prepared and cooked)
1 can of sliced Champignon mushrooms (thank you American influence in Filipino food)
2 long green chillies, cut across diagonally (if you are scared of heat, take off the seeds)
5 fat stalks of spring onions, white to white-green part only, cut into 1 inch parts
1 medium sized Spanish onions, finely diced
2 extra-large eggs (if you are a vegan, use water instead, yup 2 extra-large eggs of water)
1/2 cup flour just to hold them together
salt, pepper and sugar to taste
If you can see on the above ingredients, I did not use any starchy or beany vegetable. What I want to happen is, when I bite into the patty, I should feel the crunch of fried banana heart pieces, and sink into layers of mushrooms while feeling my teeth cutting and pulling crunchy tubes of sweet spring onions and then after that feel the heat of chillies.
I heart.
Mix all the banana heart veggie burger ingredients above in a bowl and happily form patties. Don’t be fussed if the consistency is not intact because the moment it lands on a hot pan, it will hold together like hippies in rehab.

I used Pandesals (Filipino breakfast rolls, yes dinner rolls are non-existent to us) for burger buns and just the usual tomato-onions-pickles-mayo-ketchup to go with it. I would have made something more gourmet but then I have to hang myself after that if I do. But you can do whatever you want with yours. I’ve taken care of the patty for you, you take care of the rest yourself.

your recipe for this patty seems good but mine is a simpler one. the one which was published in women’s mag when I was in my teens. I was rewarded with a crisp 5 peso bill then.

I was first able to try a banana heart burger at bliss cafe in baguio and it was great. I love meat but want to live more healthy… The recipe calls for prepared & cooked banana heart — How exactly should it be cooked? (so sorry, i’m a newbie in the kitchen)
My patties didn’t hold together like hippies in a rehab. They fell out like old lovers trying to avoid each other instead. Better buy that flour, then.
