Hi Frank! Welcome to myfilipinokitchen :) worcestershire sauce and use of alcohol (rum) are not that common in Filipino cooking (aside from the dish "nilasing na hipon" or drunken shrimp and of course, the festive fruitcake), though the make up of ingredients and the process in your rib recipe is similar to this one. If you think about it, all the rib recipes around the world (either in marinade or stew) are similar. I will try your recipe.

As for the tomato component in Filipino dishes, here's a link as to why we most likely use it everyday:

Not the most common and perhaps most popular Filipino rib recipe I was taught: Soya sauce, vinegar, rum, garlic, bay leaf, water, lime juice, worcestershire sauce, sugar, black pepper,in no particular order.Don't ever recall seeing a tomato in any Filipino dish that I was served. Cooking method is similar, except that some liquid is discarded after awhile, and a touch up of soya sauce directly over the almost fall-off-the-bones ribs, and the final cooking. I personally would never do the "mashing thing" because there is a lot of fat from the ribs. In the morning, that fat has risen to the surface on the remaining ribs, and one can pluck out the remaining ribs without the fat. Yes some liquid is great for the rice. Great Site!
